Traditions are one of my favorite thing to explore. From when I was a child, I remember traditions that my mom and dad did every year. At Christmas time, we would get together with my extended family on Christmas Eve. We would attend the Christmas Eve service at our church and then go and have dinner together. Every year it was the same dish served, Oyster Stew. I never understood the why of that or how the tradition started, but it happened every year. Occasionally, we would have a guest attend and we would have another dish like beef stew or chili, but most years it was just oyster stew. Let me tell you, this dish, is an acquired taste. Now this tradition has gone to the wayside, however, we have replaced it with other fun traditions. We now have Chinese on Christmas Eve.
On Valentine's Day, my mom would get each my sister and I a small box of chocolates and we would have fancy pancakes for dinner, just regular pancakes with cherry pie filling and whipped cream on top.
For our birthday's, she would set a special place for us using her special China plates my parents received on their wedding day.
A tradition that I started with my kids a few years back were Birthday Pancakes. At the time, I was a newly single mom trying to make the it all work. I wanted a way to make the kiddos' birthday special on a tight budget. This is how the Birthday Pancake was inspired. Our Birthday Pancakes have lots of inclusions and lots of options. Mostly, the kid want sprinkles mixed in the batter and whipped cream on top. Some kiddos want chocolate chips and whipped cream on them, others want fruit. My favorite part is that now, even though we do other things for their birthdays now, they still request the Birthday Pancakes as a part of their special day.
